Smedes Fish frying oil has a longer shelf life than other brands. You can extend the shelf life even more by:
Ensuring that the temperature of the oil does not exceed 180 degrees Celsius.
Sieving the breadcrumbs from the oil after each use.
Defrosting deep-frozen fish before use. Seasoning the fish after and not before frying. Keeping stirring to a minimum.
Keeping the temperature of the oil at a constant level throughout the day.
Tip: Tap off the oil at the end of the day, leave it to stand overnight and pour the upper layer back into the pan the next day.
